Grand Carmes Red

The red wines are most distinguished. Boasting deep ruby red colour they offer subtle aromas with a complex nose. Full-bodied with a high content in noble tannins, they have great keeping potential.

Vineyard
The vine stocks grow on hillsides exposed to the North, rocky limestone soil.
Average age of the vine stocks
More than 50 years (some plots are more than one hundred years old).
Varietals
Grenache 45%, Mourvèdre 30%, Cinsaut 5%. Secondary varietals 20%, including Syrah, Castet, Manosquin, Carignan, various Muscat.
Harvest
Exclusively carried out by hand at full maturity, sorting of grapes, fermentation using natural yeasts under controlled temperature.
Vinification
Light pressing with stemming, vatting in small capacity vats with pump-over, maceration for 15 to 21 days. The dregs are pressed using vertical hydraulic wine presses.
Conservation & maturing
Exclusively in wood casks, first in small tuns for 8 months, then for one year in oak casks of different ages, blended on bottling with no filtering.
